Jonathan Blutinger is a food engineer with a passion and dedication to revolutionizing the culinary landscape through novel digital cooking platforms and innovative food production techniques. During his academic journey, Blutinger led a team at Columbia University’s Creative Machines Lab to develop a fully integrated digital cooking platform that can 3D print and laser cook software-generated food recipes. After completing his doctorate at Columbia University, he worked as a postdoctoral fellow on a project funded by Redefine Meat, developing robotic frameworks to scan real and fake meat textures for more precise plant-based meat replication.
Blutinger is currently working with the U.S. Army DEVCOM Soldier Center in their Combat Feeding Division. His team is tasked with optimizing untethered food logistics to healthily feed soldiers in the field.
